Enjoy The Observatory’s Signature Non-Alcoholic Cocktail at Home

To celebrate the last weekend of Dry January, the Observatory in the Grand Central Hotel has shared an exquisite non-alcoholic cocktail recipe.

Caelan McVeigh, Bar Manager of Ireland’s tallest cocktail bar said:

“Over the past 12 months we have seen a growth in our sales of non-alcoholic cocktails. We’re also finding that more often than not, designated drivers are preferring to opt for a non-alcoholic cocktail instead of a soft drink or hot beverage as it makes them feel more included with the rest of their group.

Due to this demand, we have created our signature non-alcoholic cocktail, the St Anne’s, inspired by Belfast’s famous landmark.  Our non-alcoholic Mojitos and Brambles are also proving very popular. We are also working on some low- alcohol cocktails for our new menu and hoping to introduce 0% gin this year.

And to celebrate the end of Dry January, we are delighted to share the recipe for, St Anne’s, a delightful fruit based non-alcoholic cocktail which is as bold in colour as it is in flavour.”

 

ST ANNE’S

Ingredients

  • 70ml Thompson’s Berry Tea
  • 70ml Pineapple Juice
  • 30ml Fresh Lemon Juice
  • 20ml Salted Raspberry Cordial which is made up of:
  • 1 cup of Boiling Water
  • 1 cup of White Sugar
  • 1 cup of Raspberry Puree
  • 2tsp Salt

To Garnish – Fresh Raspberry and Mint Leaves

 

Method

Make this part of the recipe in advance:

  • Make the Thompson’s Berry Tea, let it cool and decant into a container and refrigerate.
  • To make the Salted Raspberry Cordial, put a saucepan on a medium heat, add the boiling water, sugar, raspberry puree and salt. Stir until all ingredients have mixed. Cool and decant into a container and refrigerate.

To make the cocktail:

  • In a cocktail shaker, add the Berry Tea, Pineapple Juice, Lemon Juice and Salted Raspberry Cordial.
  • Shake with Ice
  • Strain into glass and garnish with raspberry and mint.
